Jamie Wickens has been Winchelsea's butcher for over 20 years, selling the very best quality free-range beef, lamb and pork from local Sussex farmers. One of the major suppliers to the shop is Elm's Farm, managed by the Wetland Trust, where top-quality rare-breed beef, lamb and pork is produced.

In October 2009, J Wickens Family Butchers moved into newly refurbished High Street premises, alongside the Winchelsea Farm Kitchen, a delicatessen, wine cellar and coffee shop offering a magnificent array of food and wine, expertly selected from the very best producers in Sussex, the Continent and beyond.

Our Beef Topside is on offer this month for only £3.96/lb (£8.71kg). Cut from the top of the leg, this is a lean, boneless cut that lends itself to braising and pot-roasting recipes. Why not try this recipe for Pot-Roast Beef with Anchovies and Tomato? Or for a perfect roast, brown your topside joint for 15 minutes at your oven's highest temperature, then finish at 180C degrees (350F) or gas mark 4. Cooking time 15 minutes per 500g. Don't forget to rest the meat after cooking – cover with foil and allow at least 10 minutes.
