Why not try this recipe for Pot-Roast Beef with Anchovies and Tomato? Or for a perfect roast, brown your topside joint for 15 minutes at your oven's highest temperature, then finish at 180C degrees (350F) or gas mark 4. Cooking time 15 minutes per 500g. Don't forget to rest the meat after cooking – cover with foil and allow at least 10 minutes.
