At J Wickens Family Butchers traditional cuts of Sussex beef are beautifully dressed and presented, along with prime pork and Romney Marsh Lamb. The shop has an outstanding reputation for making award-winning speciality sausages, including favourites such as pork and leek, pork and apple, venison, beef with tomato and onion and lamb with rosemary and garlic. Beef burgers, lamb burgers, venison burgers and kebabs are all made on the premises.
Free-range and organic chicken is sold, together with traditionally cured bacon and superb beef, pork and game pies. As a licensed game dealer, pheasant, partridge, mallard, pigeon, woodcock, venison, wild boar, hare and rabbit is available when in season.

Our Beef Topside is on offer this month for only £3.96/lb (£8.71kg). Cut from the top of the leg, this is a lean, boneless cut that lends itself to braising and pot-roasting recipes. Why not try this recipe for Pot-Roast Beef with Anchovies and Tomato? Or for a perfect roast, brown your topside joint for 15 minutes at your oven's highest temperature, then finish at 180C degrees (350F) or gas mark 4. Cooking time 15 minutes per 500g. Don't forget to rest the meat after cooking – cover with foil and allow at least 10 minutes.
